You’ll need: 1 package dry yeast, 1 1/2 teaspoons sugar, 1 cup warm water, 2 1/2 cups flour, 1 teaspoon salt, 2 tablespoons baking soda, 1 to 2 tablespoons coarse salt, and corn meal.
Dissolve the yeast and sugar in 1/4 cup of the warm water. Mix the flour, salt, and remaining water. When the yeast is foamy, add it to the flour. Place the dough on a floured board and let it sit for five minutes. Knead the dough for 10 to 15 minutes, adding more flour if sticky.
Place the kneaded dough in a greased bowl and cover tightly with Saran Wrap. Let it rise for one hour. Punch it down and separate it into eight pieces. Roll each piece into a rope and form it into a heart. Let the heart pretzels rest for 15 minutes.
Simmer one quart of water and add baking soda. Place the pretzels in the water for 30 seconds on each side. Pat dry. Sprinkle with coarse salt. Dust a baking sheet with corn meal, place pretzels on the baking sheet, and bake 10 to 12 minutes at 450 degrees.
Serve pretzels warm with mustard or Cheeze Whiz.
